    Prepare the Marinade (Optional)

    If you choose to use the marinade, combine the minced garlic, chopped rosemary, and lemon juice in a bowl. Mix well and set aside.

    Marinate the Steak (Optional)

    Place the ribeye steaks in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

    Season the Steak

    If not marinating or after marinating, remove the steaks from the dish, pat them dry with paper towels, and brush both sides with olive oil. Season generously with salt and black pepper.

Cooking

    Preheat the Grill

    Preheat your grill to high heat, around 450°F to 500°F (232°C to 260°C).

    Grill the Steak

    Place the ribeye steaks on the grill. For medium-rare, grill the steak for about 4-5 minutes on one side, then flip and grill for another 4-5 minutes. Adjust time for desired doneness.

    Rest the Steak

    Remove the steak from the grill and let it rest for at least 5 minutes before slicing. This allows the juices to redistribute.
