Preparation of Chateaubriand

Season the Beef
Take the Chateaubriand and pat it dry with paper towels. Generously season all sides with salt and black pepper, ensuring an even coating.

Sear the Beef
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the Chateaubriand and sear for about 3-4 minutes on each side until a golden-brown crust forms.

Cook the Beef
Transfer the skillet to a preheated oven at 400°F (200°C) and roast for approximately 15-20 minutes, or until the internal temperature reaches 130°F (54°C) for medium-rare.

Remove the Chateaubriand from the oven and cover it loosely with aluminum foil. Let it rest for 10 minutes before slicing.

Roast Brussels Sprouts
Preheat the oven to 425°F (220°C). Halve Brussels sprouts and toss with olive oil, salt, and pepper. Roast on a baking sheet for 20-25 minutes until crispy and golden.
