Shuck the Oysters
Using an oyster knife, carefully shuck each oyster by inserting the knife into the hinge of the oyster and twisting it open. Discard the top shell and keep the oyster in the bottom shell. Place the opened oysters on a bed of crushed ice to keep them chilled.

Prepare the Mignonette
In a small bowl, combine the red wine vinegar, finely chopped shallots, and crushed black peppercorns. Stir well and let the mixture sit for at least 15 minutes to allow the flavors to meld.

In another bowl, mix together the ketchup, horseradish, lemon juice, Worcestershire sauce, and hot sauce. Adjust the horseradish and hot sauce to taste for desired spiciness.
