Method

Preparation

  1. 1

    Season the Steak

Pat the New York strip steak dry with paper towels to remove excess moisture. Rub both sides generously with kosher salt, black pepper, garlic powder, and onion powder. Allow the steaks to sit at room temperature for about 30 minutes to enhance the flavor and tenderness.

Cooking

  1. 2

    Heat the Pan

In a large skillet or cast-iron pan, heat the olive oil over medium-high heat until it shimmers but does not smoke.

  2. 3

    Sear the Steaks

Once the pan is hot, carefully place the seasoned steaks in the pan. Sear for about 4-5 minutes on one side without moving them to achieve a good crust.

  3. 4

    Flip the Steaks

Using tongs, flip the steaks to the other side and cook for an additional 4-5 minutes for medium-rare, or longer if desired. If using, add butter and rosemary in the last minute of cooking, basting the steaks with the melted butter for added flavor.

  4. 5

    Rest the Steaks

Remove the steaks from the pan and place them on a cutting board. Tent loosely with aluminum foil and let them rest for about 5-10 minutes before slicing. This allows the juices to redistribute.

Serving

  1. 6

    Slice and Serve

Slice the New York strip steak against the grain and serve it immediately. Optionally, garnish with fresh rosemary sprigs for added aroma and flavor.
