Salad Preparation

    Prepare the Lobster

    If using live lobster, steam or boil until fully cooked. Once cooled, remove the meat from the shells and chop into bite-sized pieces. If using pre-cooked lobster, simply chop the meat.

    Prepare the Vegetables

    Wash the romaine lettuce thoroughly and chop it into bite-sized pieces. Slice the avocado in half, remove the pit, and scoop the flesh out. Cut the avocado into slices. Halve the cherry tomatoes. Peel and slice the hard-boiled eggs.

    Assemble the Salad

    In a large salad bowl, combine the chopped romaine lettuce, lobster meat, avocado slices, cherry tomatoes, sliced hard-boiled eggs, crumbled bacon, and blue cheese.

Vinaigrette Preparation

    In a small bowl, whisk together the champagne vinegar, finely chopped Vidalia onion, Dijon mustard, olive oil, salt, and black pepper until well combined and emulsified.
