Preparing the Broth

    Combine ingredients

    In a large pot, combine 8 cups of beef broth, 2 bay leaves, 1 tsp of dried thyme, 1 tsp of salt, and 1 tsp of black pepper. Bring to a simmer over medium heat.

Caramelizing Onions

    Slice the onions

    Peel and thinly slice 4 yellow onions.

    Cook the onions

    In a large skillet, melt 4 tbs of butter and 2 tbs of olive oil over medium heat. Add the sliced onions and stir to coat. Cook, stirring occasionally, until the onions are deep golden brown and caramelized, about 30-40 minutes.

Combining and Serving

    Add onions to broth

    Once the onions are caramelized, add them to the simmering broth. Allow to simmer together for an additional 15-20 minutes.

    Prepare the baguette

    While the soup is simmering, slice the baguette into 1-inch thick slices. Toast in a broiler until golden brown on both sides.

    Serve the soup

    Ladle the soup into oven-safe bowls. Top each bowl with a slice of toasted baguette and sprinkle 1/2 cup of Gruyère cheese and 1/4 cup of Parmesan cheese on top.

    Melt the cheese

    Place the bowls under the broiler for 2-3 minutes, or until the cheese is bubbly and golden brown. Serve hot.
