    Chop the onion, bell pepper, tomato, jalapeno, and olives. Cook the bacon in a skillet until crispy, then chop into small pieces.

    In a bowl, crack the eggs and beat them until well mixed. Season with salt and black pepper to taste.

    Cook the Omelet

    Heat olive oil in a non-stick skillet over medium heat. Add the chopped onion and bell pepper, cooking until soft. Pour the beaten eggs into the skillet, swirling to cover the bottom. As the eggs begin to set, sprinkle the cooked bacon, chopped ham, cheddar cheese, olives, jalapeno, and tomato on one half of the omelet.
