Rinse the calamari rings under cold water and pat them dry with paper towels. This will help achieve a crispier texture when frying.

In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well to ensure an even distribution of seasonings.

Heat Oil for Frying
In a deep frying pan or pot, heat the vegetable oil over medium-high heat. The oil should be hot enough that a small piece of calamari sizzles when added.

Coat Calamari
Dip each calamari ring in the egg wash, allowing any excess to drip off, then dredge in the flour mixture to coat thoroughly.

Fry Calamari
Carefully add the coated calamari rings into the hot oil in batches, being careful not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove them and drain on paper towels.

In a small bowl, mix together the Thai sweet chili sauce, minced garlic cloves, lime juice, and red chili flakes. Stir until combined.
