Calamari

Sweet Chili Sauce

Method

Preparation of Calamari

  1. 1

    Clean and Prepare Calamari

Rinse the calamari rings under cold water and pat them dry with paper towels. This will help achieve a crispier texture when frying.

  2. 2

    Mix Dry Ingredients

In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well to ensure an even distribution of seasonings.

  3. 3

    Prepare Egg Wash

In a separate bowl, beat the eggs until smooth. This will be used to coat the calamari before dredging in the flour mixture.

Cooking Calamari

  1. 4

    Heat Oil for Frying

In a deep frying pan or pot, heat the vegetable oil over medium-high heat. The oil should be hot enough that a small piece of calamari sizzles when added.

  2. 5

    Coat Calamari

Dip each calamari ring in the egg wash, allowing any excess to drip off, then dredge in the flour mixture to coat thoroughly.

  3. 6

    Fry Calamari

Carefully add the coated calamari rings into the hot oil in batches, being careful not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove them and drain on paper towels.

Preparation of Sweet Chili Sauce

  1. 7

    Combine Sauce Ingredients

In a small bowl, mix together the Thai sweet chili sauce, minced garlic cloves, lime juice, and red chili flakes. Stir until combined.

  2. 8

    Taste and Adjust

Taste the sauce and adjust the seasoning if needed, adding more lime juice or chili flakes to suit your preference.

Serving

  1. 9

    Plate the Dish

Arrange the fried calamari on a serving platter and serve immediately with the sweet chili sauce on the side for dipping.
