Method

Preparing the Batter

    Melt Chocolate and Butter

    In a medium saucepan, combine the unsweetened chocolate and unsalted butter. Heat over low heat, stirring constantly until melted and smooth. Remove from heat and let it cool slightly.

    Mix Sugar and Eggs

    In a large mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until well combined and slightly frothy.

    Combine Mixtures

    Pour the melted chocolate mixture into the egg mixture and stir until smooth. Add the vanilla extract, all-purpose flour, and a pinch of salt, and mix until just combined.

Baking the Cakes

    Prepare Ramekins

    Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with flour, tapping out the excess.

    Fill Ramekins

    Divide the batter evenly among the prepared ramekins, filling them about 2/3 full.

    Bake

    Place the ramekins on a baking sheet and bake in the preheated oven for about 12-14 minutes, or until the edges are firm but the center is still soft.

    Cool and Serve

    Remove the ramekins from the oven and let them cool for 1 minute. Carefully invert each ramekin onto a plate to release the cake. Dust with powdered sugar and serve immediately with a scoop of vanilla ice cream.
