Crust Preparation

    Prepare the crust

    In a medium bowl, combine the graham cracker crumbs, granulated sugar, melted butter, and salt. Mix until well combined and the mixture resembles wet sand.

    Form the crust

    Press the crumb mixture evenly into the bottom of a 9-inch springform pan. Use the bottom of a glass to firmly pack it down. Bake in a preheated oven at 350°F (175°C) for 8-10 minutes until lightly golden. Remove and allow to cool.

Filling Preparation

    Mix the filling

    In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy. Gradually add the granulated sugar and continue mixing until well combined.

    Add additional ingredients

    Add the sour cream, vanilla extract, and eggs one at a time, mixing well after each addition. Scrape down the sides of the bowl as needed to ensure everything is well incorporated.

    Pour into crust

    Pour the filling over the cooled crust in the springform pan. Smooth the top with a spatula.

Baking and Topping

    Bake in the preheated oven at 325°F (160°C) for about 55-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour to cool slowly.
