Method

Preparing the Pork Tenderloin

    Preheat the Broiler

    Preheat your broiler to high, and adjust the oven rack so that it's about 6 inches away from the heat source.

    Prepare the Pork

    Trim any excess fat from the pork tenderloin and cut it into 1-inch thick medallions.

    Season the Medallions

    In a bowl, mix together olive oil, garlic powder, salt, and black pepper. Rub this mixture evenly over the pork medallions.

    Broil the Pork

    Place the seasoned pork medallions on a broiler pan and broil for 4-5 minutes on each side, or until the internal temperature reaches 145°F (63°C).

Making the Raspberry Chipotle Reduction

    Combine Ingredients

    In a small saucepan, combine the fresh raspberries, chipotle peppers, brown sugar, red wine vinegar, and a pinch of salt.

    Cook the Sauce

    Add 1 cup of water to the saucepan and bring the mixture to a boil over medium heat. Reduce the heat and let it simmer for about 10-15 minutes, or until the raspberries have broken down.

    Blend and Strain

    Using a blender or an immersion blender, blend the mixture until smooth. Strain through a fine-mesh sieve into a clean saucepan, discarding the solids.

    Reduce the Sauce

    Return the strained sauce to the stove and simmer for an additional 5-10 minutes, or until it thickens slightly. Adjust seasoning with salt if needed.
