Preparation of Prawns

    Clean the Prawns

    Rinse the jumbo fresh water prawns under cold running water and pat them dry with paper towels.

    Marinate the Prawns

    In a large bowl, combine olive oil, minced garlic, salt, and black pepper. Add the cleaned prawns and toss to coat evenly. Let marinate for at least 15 minutes.

Citrus Riesling Glaze

    Prepare the Glaze

    In a saucepan over medium heat, combine the Riesling wine, fresh orange juice, fresh lemon juice, and honey. Bring to a simmer, then reduce heat to low and let simmer for about 10-15 minutes, stirring occasionally until the mixture thickens slightly.

    Once the glaze has thickened, remove from heat and stir in the chopped fresh watercress. Set aside.

Broiling the Prawns

    Preheat your broiler to high. Adjust the oven rack so that it is about 6 inches from the heat source.

    Place the marinated prawns on a broiler-safe baking sheet in a single layer. Broil for 2-3 minutes on each side, or until they turn pink and are cooked through.
