Preparation of Sea Scallops

    Preheat the Broiler

    Preheat your oven's broiler on high for about 10 minutes while you prepare the scallops.

    Season the Scallops

    Pat the jumbo sea scallops dry with paper towels. In a bowl, toss the scallops with olive oil, salt, and black pepper to coat evenly.

Making Watercress Pesto

    Blend the Ingredients

    In a food processor, combine the fresh watercress, pine nuts, Parmesan cheese, garlic, olive oil, salt, and lemon juice. Blend until smooth, scraping down the sides as necessary.

    Adjust Seasoning

    Taste the pesto and adjust the salt or lemon juice as needed. Set aside.

Making Lemon Butter

    Melt the Butter

    In a small saucepan over low heat, melt the unsalted butter. Add the minced garlic and sauté for about 1 minute until fragrant.

    Finish the Lemon Butter

    Stir in the lemon juice and chopped parsley. Remove from heat and set aside.

Broiling Scallops

    Broil the Scallops

    Arrange the seasoned scallops on a broiler-safe pan in a single layer. Broil for about 6-8 minutes until the scallops are opaque and lightly browned on the top.

    Remove the scallops from the oven and plate them. Drizzle the lemon butter over the scallops and serve with a generous spoonful of watercress pesto on the side.
