    Season the Pork Chops

    Pat the pork chops dry with paper towels. Season generously with salt and black pepper on both sides.

    Sear the Pork Chops

    In a large skillet, heat olive oil over medium-high heat. Add the pork chops and sear for about 4-5 minutes on each side until they are golden brown.

    Add Aromatics

    Add the minced garlic and chopped rosemary to the skillet during the last minute of cooking. Cook until fragrant.

    Rest the Pork Chops

    Remove the pork chops from the skillet and let them rest for at least 5 minutes before serving.

Apple Cider Reduction

    Combine Ingredients

    In a small saucepan, combine apple cider, honey, and cider vinegar.

    Reduce the Mixture

    Bring to a gentle boil over medium heat. Reduce heat and let it simmer until the mixture is reduced by half and thickened, about 15-20 minutes.

    Strain Sauce

    Strain the reduction through a fine-mesh sieve to remove any solids. Set aside.

Sweet Corn Cakes

    In a large bowl, whisk together cornmeal, flour, baking powder, salt, and sugar.

    In another bowl, whisk together milk and egg. Add the corn kernels and melted butter.

    Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix.

    Heat a non-stick skillet over medium heat and pour in about 1/4 cup of batter for each cake. Cook until bubbles form on the surface and the edges look set, about 3-4 minutes. Flip and cook for another 2-3 minutes until golden brown.
