Skillet Potatoes

Method

Beef Tenderloin

  1. 1

    Preheat Oven

Preheat the oven to 400°F (200°C).

  2. 2

    Season Beef

Season the beef tenderloin with salt and black pepper on all sides.

  3. 3

    Sear Beef

In a skillet, heat olive oil over medium-high heat. Sear the beef on all sides until browned, about 4-5 minutes.

  4. 4

    Roast Beef

Transfer the skillet to the preheated oven and roast for 15-20 minutes for medium-rare or until desired doneness.

  5. 5

    Rest Beef

Once cooked, remove from oven and let rest for 5 minutes before slicing.

Eggs and Hollandaise Sauce

  1. 6

    Melt Butter

In a double boiler, melt the butter over low heat until it is completely melted.

  2. 7

    Whisk Egg Yolks

In a separate bowl, whisk together the egg yolks and lemon juice until thickened.

  3. 8

    Prepare Hollandaise

Gradually whisk in the melted butter until the sauce is smooth. Season with salt and cayenne pepper.

  4. 9

    Poach Eggs

In a pot of simmering water, poach the eggs for about 3 minutes until the whites are set but the yolks are still runny.

Skillet Potatoes

  1. 10

    Prepare Potatoes

Peel and dice the potatoes into small cubes.

  2. 11

    Cook Potatoes

In a skillet, heat olive oil over medium heat and add the diced potatoes and chopped onion.

  3. 12

    Fry Potatoes

Season with salt, black pepper, and paprika. Cook until the potatoes are golden brown and crispy, about 15-20 minutes.

Fruit Garnish

  1. 13

    Prepare Fruit

Rinse the mixed berries and pat dry. Arrange them on the plate for garnish.

  2. 14

    Garnish

Chop mint leaves and sprinkle over the berries for added flavor.
