    Prep the Ingredients

    Peel and finely chop the shallots. Season the beef medallions with salt and black pepper on both sides.

    Prepare the Blue Cheese

    Crumble the blue cheese into small pieces and set aside for serving.

Cooking

    Sear the Beef

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once the oil is hot, add the beef medallions and sear them for about 3-4 minutes on each side for medium-rare, or until desired doneness. Remove the medallions from the skillet and set aside to rest.

    Make the Red Wine Reduction

    In the same skillet, add the chopped shallots and cook over medium heat until they are softened, about 2-3 minutes. Pour in the red wine and bring it to a simmer. Allow it to reduce by half, about 5-7 minutes, stirring occasionally.

    Combine and Serve

    Once the wine has reduced, return the beef medallions to the skillet to warm them slightly. Plate the medallions and spoon the red wine reduction over the top. Sprinkle crumbled blue cheese over the medallions before serving.
