Method

Preparation

  1. 1

    Prepare the Marinade

In a small bowl, mix together the olive oil, minced garlic, chopped rosemary, salt, and black pepper to create the marinade.

  2. 2

    Marinate the Filet Mignon

Place the filet mignon in a resealable plastic bag or a shallow dish. Pour the marinade over the meat, ensuring it is well-coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or overnight for best results.

Cooking the Sides

  1. 3

    Prepare the Baby Potatoes

Wash the baby potatoes thoroughly. Place them in a pot of salted water and bring to a boil. Cook for about 20 minutes or until fork-tender. Drain and set aside.

  2. 4

    Cook the Asparagus

Trim the ends of the asparagus. In a skillet over medium heat, add a tablespoon of olive oil. Sauté the asparagus for about 5-7 minutes until tender but still crisp. Season with salt and pepper to taste.

Cooking the Filet

  1. 5

    Preheat the Grill or Pan

Preheat your grill or a skillet over medium-high heat. If using a skillet, add a little olive oil to prevent sticking.

  2. 6

    Cook the Filet Mignon

Remove the filet mignon from the marinade and let excess marinade drip off. Cook on the grill or skillet for about 4-5 minutes per side for medium-rare, or until your desired doneness is reached.

  3. 7

    Add Butter and Lemon

During the last minute of cooking, add butter and lemon juice to the pan or grill. Spoon the melted butter over the filet to enhance the flavor.

Serving

  1. 8

    Plate the Meal

Once cooked, remove the filet mignon from heat and let it rest for 5 minutes. Serve the filet alongside the baby potatoes and sautéed asparagus. Drizzle with any remaining butter and lemon juice from the pan.
