Preparing the Salad

    Prepare the Ingredients

    Wash and dry the lettuce mix thoroughly. Chop the red onion, mushrooms, and apple into bite-sized pieces. Drain and chop the artichoke hearts if they are whole. Slice the kalamata olives in half.

    Cook the Bacon

    In a skillet over medium heat, cook the smoked bacon until crispy. Remove from the skillet and drain on paper towels. Once cooled, chop into small pieces.

    Hard Boil the Eggs

    Place eggs in a pot and cover with cold water. Bring to a boil, then cover and remove from heat. Let sit for 12 minutes. Transfer to an ice bath to cool before peeling and slicing.

Assembling the Salad

    Combine the Veggies

    In a large bowl, combine the chopped lettuce mix, red onion, mushrooms, apple, artichoke hearts, and kalamata olives. Toss gently to mix.

    Add the Toppings

    Add the crispy bacon pieces, sliced hard-boiled eggs, crumbled bleu cheese, and crispy onions on top of the salad.

Making the Vinaigrette

    In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, honey, salt, and black pepper until well combined.
