    Preheat your oven to 450°F (230°C). Place the bone marrow in a roasting pan, sprinkle with a little salt, and roast in the oven for about 15-20 minutes until it is bubbly and golden.

    While the bone marrow is roasting, take the filet mignon pieces and season both sides generously with salt and freshly ground black pepper.

    Finely mince the garlic cloves and chop the fresh rosemary leaves.

Cooking the Filet Mignon

    In a large skillet, heat the olive oil over medium-high heat. Once the oil is hot, add the filet mignon pieces and sear for about 4-5 minutes on each side for medium-rare, adjusting the time based on your preferred doneness.
