Method

Preparing the Halibut

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Season the Fish

    Pat the Alaskan halibut fillets dry with paper towels. Brush both sides with olive oil and season with salt and black pepper.

    Place in Baking Dish

    Arrange the seasoned halibut fillets in a greased baking dish.

Making the Macadamia Crust

    Prepare the Crust Mixture

    In a food processor, combine macadamia nuts, breadcrumbs, grated Parmesan, minced garlic, and melted butter. Pulse until the mixture resembles coarse crumbs.

    Apply the Crust

    Spread the macadamia crust evenly over the top of the halibut fillets in the baking dish.

Baking the Dish

    Bake the Halibut

    Bake the halibut in the preheated oven for 20-25 minutes, or until the fish flakes easily with a fork and the crust is golden brown.

Preparing the Béarnaise Sauce

    Make the Vinegar Reduction

    In a small saucepan, combine white wine vinegar and minced shallots. Simmer over medium heat until reduced by half. Add the chopped tarragon and remove from heat.

    Whisk the Egg Yolks

    In a mixing bowl, whisk together the egg yolks and the vinegar reduction until the mixture thickens slightly.

    Incorporate Butter

    Slowly drizzle in the melted unsalted butter while whisking continuously until the sauce is thick and creamy. Season with salt and black pepper to taste.
