    Prepare the Veal

    Season the veal loin slices with salt and black pepper on both sides.

    Set Up Breading Station

    Place flour in a shallow dish, beat the eggs in another dish, and put breadcrumbs in a third dish.

    Bread the Veal

    Dredge each veal slice in flour, shaking off excess, then dip in the beaten eggs, and finally coat with breadcrumbs. Press the breadcrumbs into the meat to ensure they stick.

    Fry the Schnitzels

    In a large skillet, heat oil over medium-high heat. Once hot, fry the breaded veal slices for about 3-4 minutes on each side until golden brown. Remove and drain on paper towels.

    Make Brown Butter Sauce

    In the same skillet, reduce heat to medium and add butter. Allow it to melt and foam until it turns a golden brown color. Stir in capers and cook for an additional minute.

    Fry the Eggs

    In a separate pan, fry the eggs sunny-side up or to your preference.

    Assemble the Dish

    Place the fried veal schnitzels on a plate, spoon the brown butter and capers over the top, and place a fried egg on each schnitzel. Garnish with chopped parsley.
