
Soufflé Potatoes Recipe
Legend has it that Collinet, French King Louis Phillipe’s (reign 1830-1848) chef unintentionally created soufflé potatoes by plunging already fried potatoes into extremely hot oil to reheat them when the King arrived late for dinner one night. To the Chef’s surprise and the king’s delight, the potatoes puffed up like little balloons. We hope that you will be equally delighted. Served with Béarnaise Sauce.

Directions for Soufflé Potatoes
Prepare the Potatoes
Peel the Russet potatoes and cut them into even-sized pieces. Rinse them in cold water to remove excess starch, then pat dry with paper towels.
Second Fry
Increase the oil temperature to 375°F (190°C). Fry the potatoes again in batches for 2-3 minutes until they puff up and become golden brown. Drain on paper towels and sprinkle with salt.
