Sweetbreads and Sauce

Method

Preparation and Cooking

  1. 1

    Prepare the Sweetbreads

Soak the sweetbread medallions in buttermilk for at least 2 hours, or overnight in the refrigerator for best results.

  2. 2

    Coat the Sweetbreads

In a shallow dish, combine flour, salt, and black pepper. In another dish, whisk the egg. Remove the sweetbreads from the buttermilk, pat them dry, then dip them first in the egg and then in the flour mixture to coat evenly.

  3. 3

    Cook the Sweetbreads

In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat. Once hot, add the sweetbread medallions and cook for about 3-4 minutes on each side until golden brown and crispy. Remove and keep warm.

  4. 4

    Make the Meunière Sauce

In the same skillet, add the remaining butter and let it melt, then add the lemon juice and capers. Cook for about 2 minutes, stirring constantly until the sauce is slightly browned.

  5. 5

    Serve

Plate the cooked sweetbreads and drizzle the Meunière sauce over the top. Garnish with chopped parsley.
