Prepare the Sweetbreads
Soak the sweetbread medallions in buttermilk for at least 2 hours, or overnight in the refrigerator for best results.

Coat the Sweetbreads
In a shallow dish, combine flour, salt, and black pepper. In another dish, whisk the egg. Remove the sweetbreads from the buttermilk, pat them dry, then dip them first in the egg and then in the flour mixture to coat evenly.

Cook the Sweetbreads
In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat. Once hot, add the sweetbread medallions and cook for about 3-4 minutes on each side until golden brown and crispy. Remove and keep warm.

Serve
Plate the cooked sweetbreads and drizzle the Meunière sauce over the top. Garnish with chopped parsley.
