Sauté the Vegetables
In a large skillet or pot, heat the olive oil over medium heat. Add the diced onion, green bell pepper, and celery. Sauté until the vegetables are soft, about 5-7 minutes.

Add Garlic and Spices
Stir in the minced garlic and cook for an additional minute. Then, add the dried oregano, dried thyme, bay leaf, salt, and black pepper. Mix well.

Add Tomatoes and Broth
Pour in the canned diced tomatoes (with their juice) and chicken broth. Stir in the Worcestershire sauce and hot sauce to taste. Bring the mixture to a simmer.

Simmer
Reduce the heat to low and let it simmer for about 15 minutes, allowing the flavors to meld together.

Add Shrimp
Add the peeled and deveined Gulf shrimp to the pot. Cook for an additional 5-7 minutes, or until the shrimp are pink and cooked through.

Serve
Remove the bay leaf. Serve the Shrimp Creole over cooked rice and enjoy!
