    Make the Ice Cream Base

    In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat, stirring until the sugar dissolves. Do not let it boil.

    Whisk Egg Yolks

    In a separate bowl, whisk the egg yolks. Slowly add a cup of the warm cream mixture to the egg yolks, whisking constantly to temper them.

    Combine Mixtures

    Pour the egg yolk mixture back into the saucepan with the remaining cream mixture. Cook over low heat, stirring constantly until the mixture thickens and coats the back of a spoon.

    Add Vanilla and Salt

    Remove from heat and stir in the vanilla extract and a pinch of salt. Let it cool completely.

    Chill Mixture

    Cover the mixture and refrigerate for at least 4 hours or overnight.

    Churn the Ice Cream

    Once chilled, churn the mixture in an ice cream maker according to the manufacturer's instructions.

    Add Flavorings

    During the last few minutes of churning, divide the base into six portions for each flavor. Mix in chocolate syrup for chocolate, strawberry puree for strawberry, chopped pistachios for pistachio, peppermint extract for peppermint, and lemon juice for lemon.

    Freeze

    Transfer the flavored ice creams to containers and freeze until firm, about 4 hours.
