Directions

  1. 1

    Prepare the Lyonnaise Potatoes

In a skillet, melt 1 tablespoon of butter over medium heat. Add sliced potatoes and cook until golden brown and crispy, about 10-15 minutes. Add onions and continue to cook until onions are soft and translucent. Season with salt and set aside.

  2. 2

    Make the Omelette

In a bowl, whisk together the eggs, salt, pepper, and chopped herbs until well combined. Heat the remaining tablespoon of butter in a non-stick skillet over medium-low heat. Pour in the egg mixture and let it cook undisturbed until the edges start to set, about 2-3 minutes.

  3. 3

    Add Cheese

When the omelette is mostly set but still slightly runny on top, sprinkle the grated Gruyère cheese over one half of the omelette.

  4. 4

    Fold and Serve

Carefully fold the omelette in half and cook for another minute until the cheese is melted. Serve immediately with the Lyonnaise potatoes on the side.
