    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

    Cook the Sausage

    Add the andouille sausage to the skillet and cook until browned, about 5-7 minutes.

    Stir in the diced tomatoes and bell peppers. Season with salt and black pepper. Cook for another 10-15 minutes until the vegetables are tender and the sauce thickens.

    Using a spoon, create four wells in the sauce. Crack an egg into each well.
