Preparation of Cornish Game Hen

    Roast the hens

    Preheat the oven to 375°F (190°C). Rub the Cornish game hens with olive oil, salt, black pepper, fresh thyme, and minced garlic. Place them in a roasting pan breast-side up. Roast for about 1 hour, or until the internal temperature reaches 165°F (74°C).

Preparation of Veronique Sauce

    Make the sauce

    In a saucepan, melt butter over medium heat. Add chopped shallots and sauté until translucent. Pour in white wine and reduce by half. Add chicken broth and heavy cream, simmer until slightly thickened. Stir in halved grapes and cook for an additional 5 minutes.

Preparation of Wild Rice and Water Chestnut Dressing

    Cook the dressing

    In a pot, bring chicken broth to a boil. Add wild rice and cook according to package instructions. In a separate skillet, melt butter over medium heat, add sliced water chestnuts and chopped green onions. Sauté for 3-4 minutes, then combine with cooked wild rice. Season with salt and pepper.

    Plate the roasted Cornish game hens and drizzle with Veronique sauce. Serve alongside wild rice and water chestnut dressing.
