Crust Preparation

    Make the Sable

    In a mixing bowl, combine all-purpose flour, powdered sugar, cocoa powder, and salt. Add softened butter and mix until crumbly. Then, add the egg yolk and chopped hazelnuts, and mix until a dough forms.

    Form and Chill

    Press the dough into a tart pan evenly. Cover with plastic wrap and chill for at least 30 minutes.

    Bake the Crust

    Preheat your oven to 350°F (175°C). Blind bake the crust for 15-20 minutes until set. Let it cool completely.

Ganache Preparation

    Prepare Ganache

    Heat the heavy cream in a saucepan until it just begins to simmer. Pour it over the chopped dark chocolate in a bowl and let it sit for 2-3 minutes. Stir until smooth. Add hazelnut liqueur and mix well.

    Fill the Tart

    Pour the ganache into the cooled tart shell and spread it evenly. Allow it to set at room temperature or refrigerate for at least 2 hours.

Burnt Orange Sauce Preparation

    Make the Sauce

    In a small saucepan over medium heat, combine orange juice and sugar. Cook until the sugar dissolves and the mixture thickens slightly. Stir in butter and orange zest, and remove from heat.

Assembly and Serving

    Garnish the Tart

    Once the tart is set, garnish with candied orange peel and chopped toasted hazelnuts. Drizzle with burnt orange sauce before serving.
