    Prepare the Piquillo Pepper Puree

    In a blender, combine the piquillo peppers with a pinch of salt and blend until smooth. Set aside.

    Cook the Potatoes and Onions

    Dice the Yukon gold potatoes and onion. In a large skillet, heat the olive oil over medium heat. Add the potatoes and onions, and cook until the potatoes are golden and tender, about 15-20 minutes. Stir occasionally.

    Add Pulled Pork

    Once the potatoes are cooked, add the pulled pork to the skillet. Season with salt and black pepper. Stir well to combine and cook for an additional 5-10 minutes until heated through.

    Fry the Eggs

    In a separate skillet, fry the eggs to your desired doneness (sunny side up or over easy).

    Assemble the Dish

    To serve, place a generous portion of the hash on a plate, drizzle with piquillo pepper puree, top with a fried egg, and garnish with chopped chives.
