Cheesecake Ingredients

Method

Cheesecake Directions

  1. 1

    Prepare the crust

Preheat the oven to 325°F (163°C). In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form an even crust. Bake for 10 minutes and let cool.

  2. 2

    Make the cheesecake filling

In a large mixing bowl, beat the cream cheese and granulated sugar until smooth. Add sour cream, vanilla extract, lemon zest, and mix until combined. Add eggs one at a time, mixing on low speed until just blended.

  3. 3

    Bake the cheesecake

Pour the cheesecake filling over the cooled crust. Bake in the preheated oven for 55-60 minutes, or until the edges are set and the center slightly jiggles. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.

  4. 4

    Chill the cheesecake

Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight.

  5. 5

    Make the whipped cream

In a mixing bowl, whip the heavy cream with powdered sugar until soft peaks form.

  6. 6

    Serve

Top the chilled cheesecake with seasonal berries and dollops of whipped cream before serving.
