    Prepare the Potatoes

    Dice the potatoes into small cubes. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes, season with salt and black pepper, and cook until crispy and golden brown, about 10-12 minutes, stirring occasionally.

    Cook the Bacon

    In another skillet, cook the house smoked bacon over medium heat until crispy, about 5-7 minutes. Remove from the skillet and drain on paper towels.

    Fry the Eggs

    Using the same skillet where you cooked the bacon, add another tablespoon of olive oil if necessary. Crack the eggs into the skillet and fry to your liking (sunny-side up, over-easy, etc.), about 3-4 minutes. Season with salt and pepper.

    Toast the Bread

    While the eggs are frying, toast the slices of country bread until golden brown. Spread sweet cream butter on the hot toast.

    Assemble the Plate

    On a plate, arrange the crispy potatoes, place the fried eggs on top, add the bacon, and serve the toast on the side with seasonal preserves.
