Melt the Chocolate
Chop the dark chocolate into small pieces and place it in a heatproof bowl. Set the bowl over a saucepan of simmering water to create a double boiler. Stir occasionally until the chocolate is completely melted and smooth. Remove from heat and let it cool slightly.

Whip the Cream
In a large mixing bowl, pour the heavy cream. Using an electric mixer, beat the cream on medium-high speed until soft peaks form. Be careful not to overwhip. Set aside.

Carefully separate the egg yolks from the egg whites. Place the egg whites in a clean mixing bowl and the yolks in another bowl.
