Preparing the Swordfish

    Season the Swordfish

    Pat the swordfish steaks dry with paper towels. Rub them with olive oil, garlic powder, paprika, salt, and black pepper. Let them marinate for about 15 minutes.

    Sear the Swordfish

    Heat a skillet over medium-high heat. Once hot, add the swordfish steaks and sear for about 4-5 minutes on each side until golden brown and cooked through. Remove from the skillet and let rest.

Cooking the Broccolini

    Prepare the Broccolini

    While the fish is resting, bring a pot of salted water to a boil. Blanch the broccolini for about 2-3 minutes until vibrant green and tender-crisp. Drain and set aside.

    Sauté the Broccolini

    In the same skillet used for the fish, add a little more olive oil if necessary and sauté the blanched broccolini for an additional 2-3 minutes until tender and slightly charred.

Making the Buere Blanc Sauce

    Prepare the Sauce

    In a saucepan, melt 50 grams of the butter over medium heat. Add finely chopped shallots and sauté until translucent.

    Deglaze with Wine

    Pour in the white wine and let it simmer until reduced by half.

    Finish the Sauce

    Add the heavy cream and simmer for a few more minutes. Gradually whisk in the remaining butter until the sauce is smooth. Stir in lemon juice, salt, and black pepper to taste.

Plating

    Serve the Dish

    On a plate, arrange the sautéed broccolini beside the seared swordfish. Drizzle the buere blanc sauce over the fish and serve immediately.
