Prepare the Broccolini
While the fish is resting, bring a pot of salted water to a boil. Blanch the broccolini for about 2-3 minutes until vibrant green and tender-crisp. Drain and set aside.

Making the Buere Blanc Sauce

Deglaze with Wine
Pour in the white wine and let it simmer until reduced by half.

Finish the Sauce
Add the heavy cream and simmer for a few more minutes. Gradually whisk in the remaining butter until the sauce is smooth. Stir in lemon juice, salt, and black pepper to taste.
Plating

Serve the Dish
On a plate, arrange the sautéed broccolini beside the seared swordfish. Drizzle the buere blanc sauce over the fish and serve immediately.
