1. Harvesting Grapes
Harvest Bordeaux red grapes at optimal ripeness. Make sure to select grapes that are free from rot and disease.
2. Crushing and Destemming
Destem the harvested grapes and crush them to extract the juice. This can be done using a mechanical crusher or by foot.
3. Fermentation
Transfer the crushed grapes into a fermentation vessel. Add yeast to initiate fermentation. Allow the mixture to ferment for 10-14 days at a controlled temperature of 20-25°C (68-77°F).
4. Pressing
After fermentation, press the mixture to separate the wine from the grape skins. Use a wine press to extract as much liquid as possible.
5. Add Sulfur Dioxide
Add sulfur dioxide to the wine to prevent oxidation and spoilage. This should be done at the pressing stage.
6. Aging
Transfer the wine into French oak barrels for aging. The wine should age for a minimum of 12 months to develop its flavors.
7. Bottling
After aging, filter and bottle the wine. Ensure that bottles are clean and properly sanitized before filling.
