Prepare Strawberry Cordial

Step 1: Make the Strawberry Mixture
In a medium saucepan, combine the fresh strawberries, granulated sugar, and 250 ml of water. Cook over medium heat, stirring gently until the strawberries break down and the mixture becomes syrupy, about 10-15 minutes.

Step 2: Strain the Mixture
Once the mixture is cooked, remove from heat and strain it through a fine-mesh sieve into a bowl or pitcher, pressing the strawberries to extract as much liquid as possible. Discard the solids.

Stir in the lemon juice to the strained strawberry syrup. Set aside to cool.
Prepare Rhubarb Soda

Step 1: Cook Rhubarb
In another medium saucepan, combine the chopped rhubarb, granulated sugar, and 500 ml of water. Bring to a boil over medium heat, then reduce to a simmer. Cook for about 15-20 minutes until the rhubarb is soft and has broken down.

Step 2: Strain Rhubarb Mixture
Remove from heat and strain the rhubarb mixture through a fine-mesh sieve, pressing down to extract as much liquid as possible. Discard the solids and let the liquid cool.
Final Assembly

Step 1: Mix Ingredients
In a large pitcher, combine the cooled strawberry cordial and rhubarb soda. Stir well to combine.

Fill glasses with ice cubes. Pour the strawberry-rhubarb mixture over the ice, leaving some space for sparkling water. Add the fresh lime juice and top with sparkling water to taste.
