Ganache Preparation

Melt the Chocolate
In a heatproof bowl, add the chopped dark chocolate. In a saucepan, heat 100 ml of heavy cream over medium heat until it starts to simmer. Pour the hot cream over the chocolate and let it sit for 2 minutes.

Combine Ingredients
After 2 minutes, gently stir the chocolate and cream mixture until smooth and fully combined. Add in the strawberry puree and mix until evenly incorporated.

Chill Ganache
Cover the ganache with plastic wrap and let it chill in the refrigerator for at least 1 hour or until it thickens.
Whipped Cream Preparation

Whip the Cream
In a mixing bowl, pour 200 ml of heavy cream. Add 2 tablespoons of powdered sugar and 1 teaspoon of vanilla extract.

Beat Until Stiff Peaks
Using a hand mixer or stand mixer, whip the cream mixture on medium-high speed until stiff peaks form, about 3-5 minutes.
Assembly

Combine Ganache and Whipped Cream
Once the ganache has chilled and thickened, gently fold in half of the whipped cream into the ganache until fully incorporated.

Serve
Spoon the ganache mixture into serving dishes. Top with the remaining whipped cream. Garnish with fresh strawberries. Enjoy your Strawberry Ganache!
