Preparing the Pork Belly

    Score the Pork Belly

    Using a sharp knife, score the skin of the pork belly in a crosshatch pattern, being careful not to cut too deeply into the meat.

    Season the Pork Belly

    Rub the pork belly with salt, black pepper, and olive oil. Make sure to get the seasoning into the scored areas for maximum flavor.

    Add Aromatics

    Place the garlic cloves and fresh rosemary on top of the pork belly. Drizzle with apple cider vinegar.

    Roast the Pork Belly

    Preheat your oven to 300°F (150°C). Place the pork belly in a roasting pan and roast for 2 to 2.5 hours, or until the meat is tender.

    Crisp the Skin

    Increase the oven temperature to 475°F (245°C) and roast for an additional 20-30 minutes, or until the skin is crispy and golden brown.

Making the Apple Sauce

    Peel, core, and chop the apples into small pieces.

    In a medium saucepan, combine the chopped apples, sugar, cinnamon, lemon juice, and water. Bring to a simmer over medium heat.

    Cover the saucepan and let the mixture simmer for about 15-20 minutes, or until the apples are soft.

    Using an immersion blender or a regular blender, blend the apple mixture until smooth. Adjust sweetness if necessary.
