Lamb Chops
Method
Preparation
- 1
Marinate the Lamb Chops
In a bowl, combine the olive oil, minced garlic, chopped mint leaves, lemon juice, salt, and black pepper. Add the mini lamb chops and coat them well with the marinade. Cover and refrigerate for at least 1 hour, or overnight for best flavor.
- 2
Prepare the Yogurt Sauce
In a separate bowl, mix the Greek yogurt, heavy cream, crumbled feta cheese, and a pinch of salt. Stir until well combined and set aside in the refrigerator.
- 3
Prepare the Asparagus
Trim the ends of the asparagus and rinse them under cold water. Pat dry with a paper towel.
Cooking
- 4
Cook the Lamb Chops
Preheat a grill or a grill pan over medium-high heat. Remove the lamb chops from the marinade and place them on the grill. Cook for about 3-4 minutes on each side for medium-rare, or until the desired doneness is reached. Remove from heat and let rest for a few minutes.
- 5
Sauté the Asparagus
In a skillet, heat a tablespoon of olive oil over medium heat. Add the asparagus and sauté for about 5-7 minutes until they are tender-crisp. Season with a pinch of salt and pepper.
Serving
- 6
Plate the Dish
On a serving platter, arrange the lamb chops alongside the sautéed asparagus. Serve with a generous dollop of the yogurt sauce on the side.
