Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Use the back of a measuring cup to help pack it down. Bake the crust in a preheated oven at 350°F (175°C) for 10 minutes. Remove from oven and let cool.

In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add in 1 cup of granulated sugar and vanilla extract, mixing until combined.

Add the eggs one at a time, mixing well after each addition. Then, add 1 cup of sour cream and mix until smooth and creamy.

Pour the filling into the cooled crust, smoothing the top with a spatula. Bake in the oven at 325°F (163°C) for 50-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven and let the cheesecake cool inside for an hour.
