Crust

Method

Crust

  1. 1

    Prepare the crust

In a medium bowl, combine the graham cracker crumbs, 1 tablespoon of granulated sugar, and melted unsalted butter. Mix until the crumbs are well coated and resemble wet sand.

  2. 2

    Form the crust

Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Use the back of a measuring cup to help pack it down. Bake the crust in a preheated oven at 350°F (175°C) for 10 minutes. Remove from oven and let cool.

Filling

  1. 3

    Mix the filling

In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add in 1 cup of granulated sugar and vanilla extract, mixing until combined.

  2. 4

    Add eggs and sour cream

Add the eggs one at a time, mixing well after each addition. Then, add 1 cup of sour cream and mix until smooth and creamy.

  3. 5

    Pour the filling

Pour the filling into the cooled crust, smoothing the top with a spatula. Bake in the oven at 325°F (163°C) for 50-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven and let the cheesecake cool inside for an hour.

Topping

  1. 6

    Prepare the topping

In a medium saucepan, combine the blueberries, 2 tablespoons of granulated sugar, and 1 tablespoon of lemon juice. Cook over medium heat until the blueberries start to burst and release their juices, about 5-7 minutes.

  2. 7

    Cool the topping

Remove from heat and let the blueberry topping cool to room temperature. Once the cheesecake has cooled, spread the blueberry mixture evenly over the top.
