Fish Preparation

Make the Batter
In a mixing bowl, combine the all-purpose flour, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and thick.

Prepare the Fish
Pat the fish fillets dry with paper towels. Dip each fillet into the batter, ensuring it's fully coated.

Cut the Potatoes
Peel and cut the russet potatoes into thick fries, about 1/4 inch wide.

Fry the Fish
Using the same oil for frying the fries, heat it to 350°F (175°C) again if necessary. Carefully place the battered fish fillets into the hot oil and fry for 4-6 minutes or until golden brown and cooked through. Remove and drain on paper towels.
Tartar Sauce Preparation

Make the Tartar Sauce
In a small bowl, mix together the mayonnaise, dill pickles, capers, lemon juice, and Dijon mustard. Season with salt and black pepper to taste. Refrigerate until ready to serve.
Serving

Plate the Dish
Serve the crispy fish alongside the hot fries. Add a generous dollop of tartar sauce for dipping.
