Crispy Calamari

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Create the Breading
In a large bowl, combine all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well.

Dredge the Calamari
Pour the buttermilk into another bowl. Dip each calamari ring into the buttermilk, allowing excess to drip off, then dredge in the flour mixture until evenly coated. Set aside on a plate.

Heat the Oil
In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can use a thermometer for accuracy.

Fry the Calamari
Carefully add the calamari rings to the hot oil in batches, being careful not to overcrowd the pot. Fry for about 2-3 minutes, or until golden brown and crispy. Use a slotted spoon to remove them and drain on paper towels.
Spicy Aioli

Make the Aioli
In a medium bowl, combine mayonnaise, minced garlic, sriracha sauce, and lemon juice. Mix well until smooth and creamy.

Taste the aioli and season with salt to your preference. Mix again to incorporate the salt.
