Method

Chocolate Mousse Directions

  1. 1

    Melt the Chocolate

In a heatproof bowl, melt the semi-sweet chocolate over a pot of simmering water (double boiler method) until smooth. Remove from heat and let it cool slightly.

  2. 2

    Prepare Egg Yolks

Separate the egg yolks from the egg whites. In a mixing bowl, whisk the egg yolks with granulated sugar until pale and creamy.

  3. 3

    Combine Chocolate and Egg Yolks

Add the melted chocolate to the egg yolk mixture and stir until well combined. Add a pinch of salt and vanilla extract.

  4. 4

    Beat the Egg Whites

In a separate clean bowl, beat the egg whites until soft peaks form. Carefully fold the egg whites into the chocolate mixture in three additions, being gentle to maintain the airiness.

  5. 5

    Whip the Cream

In another bowl, whip 300 ml of heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until fully incorporated.

  6. 6

    Chill the Mousse

Spoon the mousse mixture into serving glasses or bowls. Refrigerate for at least 2 hours to set.

Whipped Cream Topping Directions

  1. 7

    Prepare the Whipped Cream

In a mixing bowl, whip 100 ml of heavy cream with powdered sugar and vanilla extract until soft peaks form.

  2. 8

    Serve

Once the mousse has set, remove from the refrigerator and top with the whipped cream. Serve immediately.
