Hummus Preparation
- 1
Blend the Hummus
In a food processor, combine the canned chickpeas, tahini, garlic cloves, olive oil, lemon juice, salt, and cumin. Blend until smooth and creamy. If the hummus is too thick, add a little water to reach your desired consistency.
Roasting Tomatoes
- 2
Roast the Tomatoes
Preheat your oven to 400°F (200°C). Cut the Roma tomatoes in half and place them on a baking sheet. Drizzle with olive oil and sprinkle with salt. Roast in the oven for 20-25 minutes until softened and slightly caramelized.
Garnishing
- 3
Prepare the Watermelon Radish
While the tomatoes are roasting, thinly slice the watermelon radish into rounds or half-moons. Set aside for garnish.
Serving
- 4
Assemble the Hummus
Once the hummus is blended and the tomatoes are roasted, transfer the hummus to a serving bowl. Top with the roasted tomatoes and garnish with the sliced watermelon radish. Drizzle with additional olive oil if desired.
