Chili Preparation

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the diced red onion and sauté for about 5 minutes until the onion is translucent. Add the minced garlic and cook for an additional 1 minute until fragrant.

    Brown the Meat

    Add the ground beef to the pot and cook until browned, breaking it apart with a wooden spoon, about 7-10 minutes. Drain any excess fat if necessary.

    Combine Ingredients

    Stir in the canned diced tomatoes, kidney beans, black beans, chili powder, ground cumin, oregano, salt, and black pepper. Mix well to combine.

    Add Broth and Simmer

    Pour in the chicken or beef broth, bring the mixture to a boil, then reduce the heat to low. Let the chili simmer uncovered for 30-40 minutes, stirring occasionally.

    Adjust Seasoning

    Taste the chili and adjust seasoning as needed. You can add more salt, pepper, or chili powder to suit your taste.

    While the chili is simmering, preheat your oven to 350°F (175°C).

    Spread softened butter on each potato roll and place them on a baking sheet.
