Calamari Preparation

    Prepare Calamari

    Rinse the calamari rings under cold water and pat them dry with paper towels.

    Make the Breading Mix

    In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix well until fully combined.

    Soak in Buttermilk

    Place the calamari rings in a separate bowl and pour the buttermilk over them. Let them soak for about 15 minutes.

    Dredge the Calamari

    After soaking, remove the calamari from the buttermilk, letting any excess drip off. Dredge each ring in the flour mixture, ensuring they are fully coated. Shake off any excess flour.

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Calamari

    Carefully add the breaded calamari rings to the hot oil in batches. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

    In a saucepan, heat the olive oil over medium heat.

    Sauté Garlic

    Add the minced garlic to the saucepan and sauté for about 1 minute until fragrant, being careful not to burn it.

    Add Tomatoes and Spices

    Stir in the crushed tomatoes, oregano, basil, salt, black pepper, red pepper flakes, and sugar. Bring to a simmer.

    Simmer the Sauce

    Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally.
