Cook the Bacon
In a large skillet, cook the bacon over medium heat until crispy, about 5-7 minutes. Remove from the skillet and place on paper towels to drain excess grease.

Prepare the Impossible Burger
In the same skillet, remove excess bacon grease, leaving about 1 tablespoon. Add the Impossible Burger and cook over medium heat, breaking it apart with a spatula until browned, about 5-6 minutes.

Slice the Jalapenos
While the burger is cooking, slice the jalapeno peppers in half lengthwise and remove the seeds for less heat, if desired.

Combine Ingredients
In a mixing bowl, combine the cooked Impossible Burger, cooked bacon (chopped), and red sauce. Mix well until all ingredients are evenly coated.

Stuff the Jalapenos
Spoon the mixture into the halved jalapenos and pack it in tightly. Top each stuffed jalapeno with a generous amount of red vegan sauce cheese.

Preheat the oven to 375°F (190°C). Place the stuffed jalapenos on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until the cheese is melted and bubbly.
