Prepare the Apple Filling

    Cook the Apples

    Peel, core, and dice the Granny Smith apples into small pieces. In a medium saucepan over medium heat, combine the diced apples, granulated sugar, cinnamon, lemon juice, cornstarch, and vanilla extract. Stir well and cook for about 5-7 minutes until the apples are tender. Remove from heat and let cool.

Make the Pie Crust

    Prepare the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Cut in the cold unsalted butter until the mixture resembles coarse crumbs. Gradually add cold water, one tablespoon at a time, mixing until the dough comes together. Divide the dough into two discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Prepare the Salted Caramel Sauce

    Make Caramel

    In a medium saucepan over medium heat, pour in the granulated sugar. Stir constantly until the sugar melts and turns a rich amber color. Carefully add the unsalted butter and stir until melted. Slowly pour in the heavy cream while whisking. Remove from heat and stir in the sea salt. Let the sauce cool slightly.

Assemble and Fry the Hand Pies

    Roll Out the Dough

    On a floured surface, roll out one disc of dough to about 1/8-inch thick. Cut into 4-inch rounds using a cookie cutter or cup.

    Fill and Seal

    Place a tablespoon of the cooled apple filling in the center of each dough round. Fold the dough over to create a half-moon shape and press the edges to seal. Use a fork to crimp the edges and ensure they are well sealed.

    Heat the Oil

    In a deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Hand Pies

    Carefully place 2-3 hand pies in the hot oil, frying for about 3-4 minutes on each side until golden brown. Remove with a slotted spoon and drain on paper towels.
