    Prepare the Garlic Aioli

    In a bowl, combine the mayonnaise, minced garlic, lemon juice, salt, and chopped parsley. Mix until smooth and set aside.

    Prepare the Potatoes

    Peel the potatoes and cut them into thin strips (fries). Soak them in cold water for at least 30 minutes to remove excess starch, then drain and pat dry.

    Fry the Potatoes

    Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels. Season with salt.

    Cook the Steak

    Season the ribeye steaks with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Cook the steaks for about 4-5 minutes on each side for medium-rare, or until desired doneness. Let them rest for 5 minutes before slicing.

    Serve

    Plate the sliced steak alongside a generous serving of fries. Serve with the garlic aioli on the side for dipping.
