Prepare the Sauce

In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté until the vegetables are softened, about 5-7 minutes.

Add the minced garlic and Italian sausage to the pan. Cook until the sausage is browned, about 5 minutes.

Stir in the shredded slow-cooked pork, canned tomatoes, and red wine. Season with salt and black pepper. Bring the mixture to a simmer and let it cook for about 30 minutes, stirring occasionally.

Cook the Pasta

While the sauce is simmering, bring a large pot of salted water to a boil. Add the pappardelle pasta and cook according to package instructions until al dente, usually around 8-10 minutes.

Once cooked, drain the pasta, reserving a bit of the pasta water, and add it to the sauce. Toss everything together, adding a bit of the reserved pasta water if needed to reach your desired consistency.

Serve

Plate the pappardelle Bolognese, and top with grated Parmesan cheese and fresh basil. Enjoy!
